{"id":3438,"date":"2020-01-05T16:14:32","date_gmt":"2020-01-05T21:14:32","guid":{"rendered":"http:\/\/www.michellebeachy.com\/blog\/?p=3438"},"modified":"2020-01-05T16:15:41","modified_gmt":"2020-01-05T21:15:41","slug":"zuppa-toscana","status":"publish","type":"post","link":"https:\/\/www.michellebeachy.com\/blog\/zuppa-toscana\/","title":{"rendered":"Zuppa Toscana"},"content":{"rendered":"<p>This has become one of our family&#8217;s favorite soups to eat. \u00a0Coupled with an Olive Garden style salad (don&#8217;t forget that freshly shredded Parmesan), and <a href=\"https:\/\/ourbestbites.com\/easy-no-knead-overnight-artisan-bread\/\">crusty artisan bread<\/a> dipped in <a href=\"https:\/\/www.rachelcooks.com\/2019\/04\/29\/bread-dipping-oil-recipe\/\">herbs and oil<\/a>, it&#8217;s a regular feast. \u00a0I love that I can easily make it dairy free by substituting coconut milk for the cream and that I can get an enormous amount of kale into our bellies without complaint. \u00a0David and the boys love that it has bacon in it. \u00a0 Basically it&#8217;s a winner all the way around. \u00a0It&#8217;s so flavorful and comforting which is just the perfect thing for those winter nights that leave you feeling a little cold around the edges.<\/p>\n<p><a href=\"http:\/\/www.michellebeachy.com\/blog\/wp-content\/uploads\/2019\/12\/zuppa-toscana-1.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-large wp-image-3439\" src=\"http:\/\/www.michellebeachy.com\/blog\/wp-content\/uploads\/2019\/12\/zuppa-toscana-1-1024x683.jpg\" alt=\"\" width=\"700\" height=\"467\" srcset=\"https:\/\/www.michellebeachy.com\/blog\/wp-content\/uploads\/2019\/12\/zuppa-toscana-1-1024x683.jpg 1024w, https:\/\/www.michellebeachy.com\/blog\/wp-content\/uploads\/2019\/12\/zuppa-toscana-1-300x200.jpg 300w, https:\/\/www.michellebeachy.com\/blog\/wp-content\/uploads\/2019\/12\/zuppa-toscana-1-768x512.jpg 768w\" sizes=\"auto, (max-width: 700px) 100vw, 700px\" \/><\/a><\/p>\n<p>Zuppa Toscana<\/p>\n<p>1\/2 pack bacon, cut into bite size pieces<\/p>\n<p>1 lb Italian sausage<\/p>\n<p>1 T. minced garlic (or more if you&#8217;re like me)<\/p>\n<p>1 large onion diced<\/p>\n<p>4 medium yellow potatoes, diced into bite size pieces<\/p>\n<p>4 c. chicken broth<\/p>\n<p>1\/2 tsp crushed red pepper flakes<\/p>\n<p>1 tsp salt<\/p>\n<p>1\/2 tsp pepper<\/p>\n<p>1 T red wine vinegar<\/p>\n<p>1 tsp dried parsley<\/p>\n<p>1 tsp dried basil<\/p>\n<p>1 pinch dried oregano<\/p>\n<p>1\/2 bunch kale (remove stems and chop)<\/p>\n<p>3\/4-1 c. heavy whipping cream OR 1 can coconut milk<\/p>\n<p>Fry the sausage and set aside to drain. \u00a0Fry the bacon, onion, and garlic. \u00a0I keep some of the bacon grease to add flavor, but if the bacon you are using is pretty fatty you will want to drain off some of it. \u00a0Return the sausage to the pot and add the chicken broth, potatoes, vinegar, and seasonings. \u00a0Cook until the potatoes are soft. Add the kale.
